Healthy Camping Recipe Ideas on a Budget

campfire-87377_640The kids are on summer break and family vacations are planned. If you plan to do any camping this summer, our guest blogger today has provided two great recipes to try out.

RV camping in California offers many beautiful sites. Some resorts such as RV parking in San Diego allow you to have access to great beaches and water activities. California RV camping is a great pastime for the family. However, to keep the vacation budget-friendly, here are a couple of ideas for healthy yet still inexpensive recipes you might like to try on your trip. Affordable and tasty, they are sure to please the entire family!

Campfire Corn and Bean Quesadillas

Ingredients
• 1 tablespoon olive oil
• 1 can corn
• salt and pepper, to taste
• 6-8 flour tortillas
• 2 cups shredded cheese
• Refried beans
• salsa

Directions: Lightly spread some olive oil on a piece of aluminum foil. Place tortilla on aluminum foil. Layer tortilla with desired toppings (corn, cheese, refried beans, salsa). Fold sides of tortilla together to keep toppings in shell. Close foil. Place on campfire cooking grate. Cook for a couple minutes on each side.

Campfire Chicken Stew Recipe

Ingredients
• 4-6 boneless, skinless chicken breasts (cut into pieces)
• 4 potatoes, peeled and sliced
• 2 cups sliced carrots
• 2 green peppers, sliced
• 1 can condensed cream of chicken soup
• 1/2 cup water
• Salt and pepper, to taste

Directions: Place chicken, potatoes, carrots, and peppers on aluminum foil (enough for one person per foil). Top each with soup (undiluted), water, salt and pepper. Fold foil around mixture and seal tightly. Cook in campfire for 25-35 minutes on each side or until chicken juices run clear.
